if you're holding the crossbow you will see a notebook and pencil button near the top right corner. If you press it you will see a undrawn crossbow and your inventory. To draw the crossbow, you click and hold then pull it back. You then load the arrow by dragging it on the drawn crossbow and releasing. Then you press the draw button again to exit out of it. After that you click and hold on the screen to aim it. You see a crosshair and that is where the arrow is going to shoot (and is effected by gravity.)
